Strawberry Season: 3 Fresh Strawberry Recipes

I love strawberries so very much. My mom used to have a strawberry patch down by our pond (I grew up on 28 and then 8ish acres in Indiana) and they were just delicious right off the vine. Recently, I’ve been blending up strawberries with a squeeze of lime juice and mixing with sparkling water (soda or tonic water) for a refreshing drink. For me, the best strawberry recipes for these beautiful fruits are light and refreshing. A fresh strawberry recipe should be enjoyed on a patio or in a garden if possible. Here are my favorite:
- Fresh Strawberry Mousse- Though not necessarily light in calories, mousse always seems like a summer dessert to me.
- Strawberry Spinach Salad- This is a great idea for summer lunch and the vitamin C in the strawberries actually helps you absorb the spinach’s iron.
- Breakfast Shake- Use a few fresh strawberries and plain or vanilla yogurt with this recipe. You can also use flaxseed in place of the oat bran.
