If you live in the suburbs like I do, October means one thing: pumpkins! They’re on front lawns, in doorways, and are displayed near the entrances to grocery stores. It’s easy to see why pumpkins are so popular: they’re very visually dramatic, make great centerpieces, and are fun and safe for kids to decorate. While we can all agree that pumpkins are beautiful, what you might not know is that they’re healthy and delicious. Pumpkins are high in fiber and low in fat, and can be made to taste either savory or sweet.
