Yum – Mexican is just one of those things everyone seems to love. Years ago, friends took Neil and I to a dingy little Mexican restaurant; it really did not look that good BUT the food was amazing! However, the years have dimmed our memories and we can’t remember what we ate.

However, we have a vegetarian friend and often find it difficult to cook her something when she comes for dinner. Our solution has been to make ‘serve yourself’ tacos. We fry up some mince in one pan (next time I’ll do it in the crock pot) and onion in another (our vego friend loves onion); then have bowls of lettuce, tomato, avocado, beans, cheese, sauces and salsa. We put it all on the table with the tacos, everyone helps themselves and we all eat too much. icon smile Monthly Morsel Question:  What is the best Mexican dish you ever ate?

If I had to pick a favorite Mexican dish…..It’s TACO!!! I LOVE tacos with spicy shredded chicken, grilled veggies cilantro lime fish on a corn tortilla or in a lettuce leaf loaded with salsa and GUACAMOLE! That would be a TIE between: (1) The authentic black bean dip DH & I ate at a back-street restaurant during our honeymoon in Cancun. (2) The amazing Carne Asada tacos we used to buy at the Alaska State Fair.

I have fond memories of an authentic Mexican restaurant in San Carlos, California. I’d always order the same dish: a Taco Salad. I’m a semi-vegan. So, they took care of me. The salad was served on a warm, very large crispy flour tortilla. A big bed of fresh dark leafy greens welcomed me. Layers of a variety of grated Mexican cheeses, chopped fresh tomatoes, sliced avocado, olives, and a dollop (or two) of sour cream. b(They held the beans because I don’t do ‘em. Too fuzzy.) I’d drizzle olive oil and red wine vinegar on top paired with to live for house salsa. A bonus: The chips were warm and refills were served without question or attitude. Plus, the service and comfy ambiance was excellent and took me to Baja every time.

Got lost in San Diego once. Rode in on a HD Sporty and spent the day getting sand up my ass on the beach on Imperial Beach watching the surfer dudes. Found a cheap hotel…looked for a dinner meal…found a Mexican seafood restaurant on the corner. The absolute best alfredo sauce with a seafood luscious heaven! Octopus, squid, crawfish, pasta, … See Morewine and seconds on everything! Finally got the sand out of my butt, got home on the Harley Sporty. I will never forget that dinner! Probably added ten pounds to my ass though…

Edgewater Cafe, Magnolia section of Gloucester, MA. Veggie Platter= Chile Rellanos, Veggie Burrito, Cheese Enchilada. Miguel’s in Marblehead was Chile Colorado and of course, the Margaritas. Both of these places were very small, always a wait. When they relocated and expanded, they just were not anywhere near the same quality. Very disappointing.

    My sister makes a wonderful chicken enchilada casserole with sour cream and green chili. She uses the flour tortillas rather than the corn.

    The best was chile rellenos at La Mexicana in Bensenville, Illinois. I would even eat it for breakfast!
