How to Use Leftover Summer Fruit

I love buying fresh ingredients in the summer. Peaches are extra juicy, strawberries taste even sweeter and cherry tomatoes pop with flavor. The only problem is that I get so much anxiety going to the grocery store. I want to buy everything fresh, but I know I’ll just be so disappointed when half of my produce goes bad in a few days.

If you’ve already purchased those perishable ingredients or if you have leftovers from a dinner party (and you’re like me and cannot waste food), then you’re going to need some recipes to savor the freshness of summer before it goes bad. Here are a few tips to create some incredible dishes before you have an incredible amount of mold.

Turn it into a pie: Summer pies are a great way to get rid of extra fruit. You don’t have to stick to the normal recipe that everyone is used to. Be inventive and try a crumble, buckle or a crisp. Try this Peach and Berry Oatmeal Crisp for a buttery, amazing ending to any meal.
Make the fresh ingredient the main attraction: Try a summery salad that makes your star ingredient pop, like this Black bean, Corn and Tomato Salad. You can use fresh or canned black beans and corn as long as those tomatos are ripe and fresh.
Drink it: Even if your fruit looks extremely questionable or feels too soft, chances are it will taste fine in a smoothie or shake. The texture and taste of the fresh fruit will come through, and the texture is masked when you blend it all together. My personal favorite is the Straberry-Banana Smoothie.
