When I was a sophomore in high school, my friend convinced me to come with him one day after school to the community service club. That day, they were going to be making food to distribute at a local soup kitchen. I couldn’t turn down a good cause, so I decided to come along.

I went with my friend into our assigned cooking station and went to work. We decided to split up the tasks. My friend got to work making stuffed shells and I started making brownies. I had never baked before in my life, but I grew up watching my mother bake so I figured I could do it.

I took the recipe in my hand and went to work sifting, measuring and combining the ingredients. I placed the brownies in the pre-heated oven and patiently waited. After about 30 minutes, I took the brownies out of the oven. Except when I removed my creation, it sloshed around the pan and looked a lot more like pudding than brownies.

I was dismayed. The people at the soup kitchen would have to eat my dirt-like creation. I though I had followed the recipe perfectly. My friend and I went through the recipe again. How could I have gone wrong?

“Did you add eggs?” My friend asked.

“Yup,” I replied.

“Sugar?”

“Yup”

“Flour?”

I paused. I realized then that I never added flour to the mixture. No wonder the concoction resembled ooblek. Luckily, one of the other groups made an extra tray of brownies. We gave all the good brownies to the soup kitchen and we ate my bizarre chocolate pudding.

Lulu’s Almost Famous Cheesecake Brownie

Serves: 24

Cooking Time: 40 min

Ingredients

  • 1 19.8-ounce package Betty Crocker Fudge Brownie mix
  • 1 8-ounce package cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla

Instructions

1. Preheat oven to 350 degrees F.

2. Prepare brownie mix as directed on package.

3. Pour into greased 13 by 9-inch baking pan.

4. Beat cream cheese until smooth.

5. Add sugar, mix until blended.

6. Add egg and vanilla; mix just until blended.

7. Pour cream cheese mixture over brownie mixture; cut through batter with knife for marble or zebra effect.

8. Bake at 350 degrees F for 35 to 40 minutes or until cream cheese mixture is lightly browned.

9. Cool; cut into squares.
