Happy National Vichyssoise Day!

What’ll they think of next?  There’s a national holiday for just about everything and every day, and November 18th is no exception.  Today is National Vichyssoise Day.  Who knew?  Hey, anyone who wants to celebrate a thick, french-style soup made from potatoes, cream, chicken stock, leeks, and onions is OK in my book.

While there are those who attribute Vichyssoise to its namesake town of Vichy, France, credit is typically given to Chef Louis Diat for creating the dish while he was Chef at the Ritz-Carlton in New York in 1917.  He hailed from Vichy, so there is your connection.

Vichyssoise (pronounced “vee shee swahzz”) is most often served cold.  You can check out one tasty Vichyssoise recipe here, and be sure to try Julia Child’s famous Vichyssoise recipe too.
