Guest Post: Samantha’s Afternoon Quesadilla

My life is over-scheduled, I live close to the Mexican border, and I look forward to my next meal before I have finished with my current repast. What this means is — I have a protein-filled quesadilla at 3:00 p.m. daily.
Some days I use chicken left over from the night before, other days I cook an egg to top my corn tortilla. But my afternoon snack is always tasty, convenient, and the perfect thing for an energy deprived foodie who wants (and deserves, if I may) a siesta, but has to keep going, just like everyone else.
So take a few minutes and make this if you’re near a stove, or pack it up and take it with you (if you plan on making ahead, a poached egg or the chicken option will keep this snack from becoming messy). Grains, lean protein, calcium and vegetables all make it into this compact snack.
