Go Veggie Every Other Day

A 2006 United Nations report summarized how the meat industry is a top two or three environmental problem. Eating meat contributes to climate change, land degradation, and pollution. With these finding, the United National Intergovermental Panel on Climate Change recommends that people start off with one meat-free day a week, and try and increase from there. In my house, we try and go meat-free every other day. Though my boyfriend was once a full-on vegetarian, he had trouble getting enough calories and nutrients while training very hard in brazilian jiujitsu (and having a very high metabolism naturally). Though I very rarely eat any red meat, my favorite food is chirashi (assorted sashimi and other ingredients over rice, generally chef’s choice) and I do enjoy the occasional bit of chicken.
Eating only vegetarian meals every other day is a great way to help manage your weight (generally vegetarian meals have fewer calories) and make sure you are getting enough fruits and vegetables. Try and plan your vegetarian meals around seasonal produce and buy local for the best environmental impact. The favorite go-to meal in this house is to throw seasonal produce into risotto, cooked with a spot of wine and mixed with some salty parmesan or gran padano at the end. - beets
- asparagus
- spinach
- swiss chard
- peppers
- peas
- strawberries
- rhubarb
- turnips
- celery
- other greens (arugula, lettuce)
