Since I don’t eat red meat, I am constantly looking for new easy chicken recipes. My standby is to roast a whole chicken, one that is simply sprinkled with salt and pepper, stuffed with half a lemon and covered in fresh herbs. Not only is roast chicken delicious, but it’s easy to make and can feed a crowd. I usually use the leftovers for sandwiches, salads and quesadillas.
