I had such high hopes for this Clementine and Goji Berry Bread, which i saw thanks to Tastespotting. The bread sounds delicious and so healthy: honey instead of sugar, whole wheat flour/oats, and antioxidant super-food goji berries (which we happened to have in the cupboard). I loved the idea of cooking the clementines whole and then pureeing peel and all for the bread. Unfortunately, the result was WAY too orangey and too moist, even after cooking for an extra 20 minutes. What did I do wrong? I substituted regular flour for the ground almonds , which I realize altered the taste quite a bit. I feel like I could have used two clementines instead of four. It seemed too liquid when I poured into the loaf pan. Should I try again with two clemetines? Get my hands on some almond flour?
Sigh. It’s so sad when a recipe doesn’t work out.
