What’s not to love about fall? The weather’s finally brisk again, and all your favorite shows have resumed airing. There’s only one downside to the season that I can think of – it seems to me that your waistline tends to expand as the weather grows colder and you spend more time indoors. Perhaps it’s unconscious preparation for winter (hibernation fat?), but everyone seems to up his consumption of calorie-laden casserole-type dishes at this time of year. I’m no exception to this myself, but this year I’ve got a perfect solution to fall-related weight gain: acorn squash! Acorn squash can be baked like a casserole or mashed like potatoes – it’s just as satisfying and delicious as any comfort food, but much less caloric.
