A Sampling of Our 21 Tempting Eggplant Recipes

When it comes to eggplant, variety is the spice of life.  The most commonly found variety is purple, but there are green, white, and orange varieties as well. In addition to a variety of eggplant colors, there is quite a variety of eggplant recipes as well.  In fact, I can give you some of our 21 tempting eggplant recipes right here!

For starters, everyone’s favorite…eggplant parmesan…in a low-fat version.  Then there are these open face eggplant feta cheese sandwiches.  I’ve got to try those this week, as they sound very tempting. For a completely different eggplant recipe, why not give this Yemenite eggplant salad with currants a try?  It’s always fun to try new eggplant recipes.
